lemon ginger drink

Lemon Ginger drink

1 lemon

a piece of ginger (2 x 2 cm)

4 tablespoons raw sugar

1 litre of water

A jug with 1 litre of water. Add the lemon juice,the finely chopped ginger and raw sugar. Stir until the sugar hasdissolved. Strain the drink. Drink cold or warm.

Ingredients for Carrot Pie

Carrot Pie

6 carrots (500 gram rasped)

6 eggs

100 gram raw cane sugar

80 gram meal (gluten free)

5 tablespoon of oil of olive

half cup of milk (50 ml)

1 tablespoon cinnamon powder

60 gram walnuts or almonds

100 gram raisins

½ teaspoon sea salt

½ teaspoon vanilla

Beat the egg yolks together with the sugar and vanilla until creamy. Add the olive oil, milk and salt and beat until smooth. Add the meal, cinnamon powder, walnuts or almonds and the raisins and beat it. Beat the egg whites until stiff. Clean and rasp the carrots. Add the rasped carrots immediately to the dough and beat it. Finally, add the stiffly beaten egg whites and beat until smooth. Place the dough in an oiled baking tin. Place it in the oven at 60 degrees Celsius. (depending on your oven). Bake the dough for about 1¼ hours. Check whether the pie is ready by inserting a sataystick into it. The stick must be dry. The pie is ready, let it cool and then it is ready to serve.

Cinnamon Soft Biscuits
Cinnamon Soft Biscuits

Cinnamon soft biscuits

200 grams of oat flour
½ teaspoon sea salt
2 teaspoons cinnamon powder

½ lemon peel grated
1 ½ cup water (+ / – 150 ml)
4 tablespoons pure honey

First mix the oat flour, salt and cinnamon, then add the lemon peel and water and mix with a spoon to a smooth firm dough. Spread a little olive oil on a baking tray. Place the dough in 4 to 6 flat 2 cm thick round forms. Bake in a preheated oven at 140 °C for around 30 minutes. Use a skewer to check whether the cakes are done –the skewer will be dry, the cakes will be brown and loose from the baking tray. Serve with 4 tablespoons of pure honey and sprinkle cinnamon on top.

Apples

Apple raisins cake   

2 large apples

200 grams of raisins

300 grams oatmeal

½ teaspoon sea salt

1 tablespoon cinnamon powder

1 vanilla stick (inside)

5 tablespoons olive oil

4 eggs

Rinse the apples with water, take out the inside of the vanilla stick.

Cut the apples into small pieces of 1½ centimetres, add 100 gram of raisins, add ½ tablespoon of cinnamon powder, add the vanilla, add 1 cup of water and cook these ingredients in a pan over low heat, stirring regularly for 30 minutes, the apple pieces are soft and the water has been completely absorbed, leave the apple mixture to cool.

Beat the 4 eggs together with the vanilla, add 5 tablespoons of olive oil and beat, add the apple mixture and mix, add 300 gram of oatmeal, ½ teaspoon of salt and the remaining ½ tablespoon of cinnamon and mix, place the mixture in an oiled baking tin and bake for 70 minutes in a preheated oven at 140 degrees Celsius (°C), this depends on the type of oven. Use a skewer to check whether the dough is cooked, the skewer is than dry.

Serve and enjoy the Apple Raisins cake, you can taste the ingredients, pure nature.

Clarified Cream Butter: Ghee

250 grams cream butter

Take a small pan and put the cream butter in it. Take a slightly larger pan and put 2 cups of water in it. Place the pan with butter in the pan with water and heat the water over low heat. * Bain de marie. The butter and milk protein separate from each other, this happens very quickly +/- 10 minutes. When the butter has melted completely, turn off the heat. The milk protein may float to the surface (scoopit away) or sink to the bottom. Pour the liquid butter into a glass or bowl. The Clarified Butter or Ghee is ready for use.

Cacao powder
cacao powder

Cacao cake

200 grams of oat flour
35 grams of cacoa powder
50 grams of sugar
½ teaspoon sea salt
6 egg yolk
4 egg whites
2 vanilla stick (inside)
6 tablespoons olive oil

4 egg whites with half vanilla beaten stiff. Beat 6 egg yolk and sugar *bain de marie, until all ingredients are added, add the remaining vanilla and mix, add olive oil and mix, add oat flour, sea salt and mix, add cacoa powder and mix, add the stiffly beaten egg white and mix well. Pour the dough into a baking tin greased with olive oil. Bake in a preheated oven for 90 minutes (first 60 minutes at 140 degrees Celsius, then 30 minutes at 100 degrees Celsius). This depends on the type of oven. Use a skewer to check whether the dough is cooked. The skewer should be dry. Take the cake out of the oven.

Crème

Boil 150 grams of sugar and 1 cup of water until syrupy, beat 2 egg whites until stiff, pour in the warm sugar syrup while beating. Add 1 vanilla stick (inside), 30 grams of cacoa powder and 1 to 3 tablespoons of orange juice, mix everything and the cream is ready. Let the cream stand for a while until it has cooled. Spread the cacoa cream on the cooled cake.
